End Grain Cutting boards offer the advantage of concealing unsightly knife scratches better then flat grain or edge grain boards. Also the vertical fibers of end grain boards are easier on knifes maintaining there sharpness longer. However the time to produce the end grain boards are more time consuming making them more costly then edge grain boards.
